Were gearing up for a wretched heatwave in Los Angeles and Im preparing to do some serious outdoor eating and drinking. Im currently in the midst of planning a big lobster/crab/shrimp boil. Have you guys ever thrown one before? If you have any tips, please share!
Im thinking of a cocktail to serve when people arrive and even though margaritas arent exactly on theme with the shrimp boil, Im thinking of serving these anyway. Theyre SO good and refreshing.
I added a tablespoon of sugar to these because my melon wasnt super sweet. I imagine as summer takes off, melons will become sweeter and sweeter but mine needed a bit of help. The lime and tequila work wonders with the sweet melon and the salt around the glasses is SO good.
I hope you have a chance to taste this refreshing drink because its such a treat for hot summery days.
Cantaloupe Margaritas
Switch up your normal happy hour go-to with this vitamin-c rich cantaloupe margarita. (Recipe Credit: Adrianna Adarme of Fresh Tastes)
- 1 (4-pound) cantaloupe, chopped
- 3 limes, divided
- 1 tablespoon sugar, optional (will depend on how sweet your cantaloupe is)
- Tequila, of choice
Ingredients
- To a blender, add the chopped cantaloupe and juice from 1 lime. You may need to do this in batches depending on how large your cantaloupe is. Pulse until smooth, about 1 minute.
- Pour the cantaloupe puree through a strainer, discarding the pulp. Give the cantaloupe juice a taste. If it needs more sweetness, feel free to stir in a tablespoon of sugar.
- Rub a lime around each glass and dip the edges in salt of choice. I used Mexican salt from Colima—it’s amazing.
- Fill each glass with ice and then add about 2 to 3 ounces of tequila per glass. Top with about 3 ounces of cantaloupe juice and a squeeze of lime juice. Stir and serve.
